Cinnamon Meringues

2 egg whites (room temperature)
½ tsp vanilla
½ tsp cinnamon
½ cup sugar
½ cup chopped pistachios

Beat egg whites, vanilla, and cinnamon until soft peaks form. Gradually add sugar; beat until stiff peaks form. Fold in pistachios. Drop by teaspoonfuls onto cookie sheet lined with wax paper. Bake at 325° F for 20 minutes. Turn oven off and leave meringues in oven until cool.

Yield: 3 dozen (less than 25 calories each!)
