Cherry Bars
½ cup butter
2 tbsp sugar
1 cup flour
2 eggs
1 tsp vanilla
1 cup sugar
¾ cup chopped pistachios
½ tsp baking powder
½ cup flour
½ cup chopped cherries, patted dry
2 tbsp (or more as needed) milk
2 cups powdered sugar
1 cup chopped pistachios
Cream butter and 2 tbsp sugar together. Mix in 1 cup flour and pat into ungreased 8x8 inch pan. Bake crust in 450° F oven for 10 minutes. Beat eggs, vanilla, and 1 cup sugar in a seperate bowl. Add ¾ cup chopped pistachios, baking powder, and ½ cup flour; mix well. Add cherries and mix again. Pour mixture over crust and bake in 350° F oven for 25 minutes. Remove from oven and cool. Combine milk and powdered sugar and pour over bars. Sprinkle 1 cup pistachios over glaze. Allow to set before cutting.
Yield: 16 two-inch square bars. |
