Spicy Ginger salad
1 small head lettuce, shredded
3/4 chopped pistachios
2 medium tomatoes, cut into bite-size pieces
4 cups sliced mushrooms
½ c thinly sliced green onions
Ginger dressing - a mixture of:
¼ c rice wine vinegar or white wine vinegar
2 tablespoons soy sauce
1 tsp finely chopped fresh gingerroot
1 tsp sesame oil
1/8 teaspoon ground red pepper
1 clove garlic, finely chopped
Toss all ingredients with ginger dressing.
