Pistachio-stuffed Baked Apples

1/3 c coarsely chopped pistachios
1/3 c raisins
1 can (6 oz) frozen apple juice, thawed and divided
½ tsp vanilla extract
¼ tsp ground cinnamon
1/8 tsp ground nutmeg or allspice
1 c low-fat yogurt
1 Tbsp honey
6 small baking apples

Mix pistachios, raisins, 2 Tbsp thawed frozen apple juice, vanilla, cinnamon, and nutmeg; set aside. Remove apple core with melon baller; do not break through bottom of the apple. Fill each apple with pistachio filling. Arrange apples in shallow baking dish. Pour remaining apple juice into pan. Bake apples at 375° F. Baste once, until apples are barely tender when pierced with knife, about 20 minutes. Mix yogurt and honey to make sauce; serve on warm apples.

Yield: 6 servings.
